Ceviche


A Latin American speciality for lovers of fresh fish



INGREDIENTS

400 g

freshly caught fish filets (e.g. Sierra/Mackerel, Sole or Hammer Head Shark)

small tomatoes

1

small onion

1

garlic clove

1 ts

Worcestersauce

1 ts

Tabasco

salt

2 tbsp

mayonnaise

10-12

small limes

fresh cilantro to your taste

1

avocado


PREPARATION

Cut the fish filets (the fish has to be absolutely freshly caught!) with a sharp knife into thin slices, than chop it up very finely. Put the fish into a small bowl and cover it with the juice of the 10-12 limes (or more if needed). The lime juice has to cover the fish! Let the fish soak (= "cook") in the fridge over night.

The next day chop the tomato and onion very thin and add it to the fish. Peel the garlic clove and press it to the fish filets. Season with Worceistersauce, Tabasco and salt. Add the mayonnaise. At the end add the finely chopped cilantro and mix it well.

To serve the Ceviche spread a little bit of mayonnaise on a Tostada (or bigger Tortilla Chips). Then spread the Tostada with Ceviche. Add some thin slices of avocado, sprinkle with drops of Tabasco and lime juice, and the delicacy is ready to eat.

Our wine suggestion:
A glass fruity Sauvignon Blanc (e.g. Santa Digna).
or: A Mexican beer as XX, Tecate, Pacifico or Corona.

Our special hint:
You should soak the fish at least for 4 hours (better over night for 12 hours) so it's really "cooked"!

Then cut the filet slices into small pieces

Soak them in enough lime juice the evening before usage

The next day you add the other ingredients - the result should look like on the picture of the recipe

Thinly spread mayonnaise on a tostada (you can also take French baguette)

Then spread Ceviche on the tostada (as much as you like - thicker is better)

If you like it spicy, add some drops of Tabasco

If you like, you can cover it with some thin slices of avocado
