Mexican Melon Salad


Mexico inspired summer salad



INGREDIENTS

cups jicama, diced

3/4

cup papaya, diced

jalapeño chili, finely chopped

1/4

cup lime juice

1/4 ts

salt

cup Feta cheese, diced

olive oil

8

slices Cavaillon melon

8

slices Honeydew melon


PREPARATION

Mix all the ingredients (except the melon slices) to a salad. Garnish with the melon slices.


Serve with crusty bread or hot tortillas.

A glass of tangy, chilly rosé wine or a glass of chilly Gewürztraminer.

To make this salad into a square meal, you can serve it with cold sliced chicken breasts.
