Mexican Melon Salad
Mexico inspired summer salad
| INGREDIENTS
1 1/2 | cups jicama, diced |
3/4 | cup papaya, diced |
1 | jalapeño chili, finely chopped |
1/4 | cup lime juice |
1/4 ts | salt |
1 | cup Feta cheese, diced |
| olive oil |
8 | slices Cavaillon melon |
8 | slices Honeydew melon |
| PREPARATION
Mix all the ingredients (except the melon slices) to a salad. Garnish with the melon slices.
Serve with crusty bread or hot tortillas.
Our wine suggestion: A glass of tangy, chilly rosé wine or a glass of chilly Gewürztraminer. Our special hint: To make this salad into a square meal, you can serve it with cold sliced chicken breasts.
