Unusual dish with century plant flowers

PREPARATION

Century plant flowers: ATTENTION, it's not possible to use the flowers of all century plants because the dish could become very bitter! It's best to ask the local people for advice, they always know what's edible in their area.

The century plant flowers have to be still closed! You can store the flowers without any problems in the fridge in case you gathered too much. Boil the flowers in a pot of water for about 1 hour. Pour the water and rinse the soft flowers 3 times in fresh, cold water. At the same time squeeze the flowers slightly so that in the end you have something like a purée.

Melt the lard in a frying pan, add the century plant flowers, and steam them for a little while. Add the minced onion and steam for another short while. Add the eggs, mix well, season with salt, and let steam until the scrambled eggs reach the wanted texture.

Serve with hot corn tortillas and a spicy salsa.
